You Don't Know It Yet, But You Want This Chicken


Sometimes, a person just has to have some chicken.

Ingredients:
Brine:
3 cups apple cider
½ cup kosher salt
Juice and zest of one lemon
2 tablespoons Worcestershire sauce

Chicken:
4 skinless chicken breasts (bone in or bone out)

Mop:
½ stick butter or margarine
Juice and zest of one lemon
2 tablespoons Worcestershire sauce
  
Directions:
 In a medium saucepan, combine brine ingredients and bring to boil. Let cool (it helps to place it in the fridge or add a few handfuls of ice cubes). Place chicken pieces in a zip top bag and pour brine over. Marinate at least four hours or overnight, turning once or twice.

Bring a gas or charcoal grill to medium-low heat. Place mop ingredients in a microwaveable container and heat on medium power for one minute or until butter melts.

Drain chicken from marinade (discard marinade) and dry with paper towels. Grill chicken on grill, turning frequently until halfway cooked (no visible pink).  Continue to cook chicken, turning and basting frequently with mop until done and juices run clear.
