Forgotten Cookies/Nighty Nites



Ingredients:
3 large egg whites (save the yolks for something else)
½ cup artificial sweetener for baking or granulated sugar
¼ teaspoon salt
1 teaspoon vanilla
1 cup chocolate chips
  
Directions: Preheat oven to 350 degrees F. Line two baking sheets with parchment paper or with foil highly sprayed with cooking spray. In an electric mixer with a large bowl, beat egg whites (starting slowly to break, then increasing speed) until soft peaks form (about 2 minutes). Continue to beat egg whites while slowly adding sweetener or sugar, a little bit at a time until stiff peaks form. Add the salt and vanilla. Mix again and gently fold in the chocolate chips. Drop by teaspoons onto prepared baking sheets. Place in oven and turn the oven off. Close the door, don’t look, and don’t even peek until the next morning. Then place in a tightly sealed container.
