This makes me very happy.
Ingredients:
Biscuits (10 biscuits):
3 cups baking mix (I used Bisquick)
1 cup buttermilk
2 tablespoons light butter, melted
Gravy:
3 Tablespoons butter
¼ cup flour
4 vegetable ‘sausage’ patties, thawed (used Morning Star)
3 cups milk
1 teaspoon salt
1 teaspoon fresh cracked pepper
Directions:
Preheat oven to 400 F. Line a baking sheet with foil and spray with cooking spray. Mix biscuit ingredients together. Drop into mounds onto the lined baking sheet and cook in the preheated oven about 10 minutes. Check after 8 minutes, though, because they might be done. You are looking for the tops to be dry looking and the bottoms to start showing a light golden brown. Remove from the oven and let cool until you can grab them off the sheet.
For the gravy, melt the butter in a large skillet over medium heat. Add the flour and stir to make a paste. Cook for a few minutes while you crumble the ‘sausage’ patties. Tumble in the patties and stir while adding the milk and seasonings. Continue stirring until the gravy gets thick and bubbly, about 5 or 6 minutes. If it doesn’t start getting thick after a few minutes, move the heat to medium high, but keep stirring so you don’t scorch the bottom. Pour some gravy over a biscuit or two and 2 and eat, eat, eat!!!
Get creative on me: Make your favorite kind of biscuits or use the store bought canned variety. Go ahead, I’ll never know the difference. Want a little kick? Use more pepper or add some red pepper flakes. You can even leave the ‘sausage’ out altogether for milk gravy.
