Chocolate Mint Wafers



Oh, these might be my new favorite-kind of like a ramped up mint cookie from the cute little girls. These go together in no time flat and would be great to have kids help with. So a few break? Big deal.

Ingredients:
2 (12 oz each) package dark chocolate chips
1 teaspoon mint extract
1/2 cup chocolate mint coated candies (such as M & Ms), crushed
1 package (9 oz) chocolate wafer cookies, such as Famous Brand


Directions: In a double boiler, melt chocolate chips over medium low heat. Remove the top pan from heat to a trivet, leaving the water simmering on the stove. Add mint extract to the chocolate chips. Tilting the pan of chocolate, coat each wafer-one at a time-in the warm chocolate (as far up as your clean fingertips), scraping the bottoms on the edge of the pan, and lay flat on wax paper. If the chocolate mixture becomes too thick, place it back over the simmering water for a few minutes to re-melt. Drizzle any remaining warm chocolate over the tops of the cookies and, while the chocolate is still warm, sprinkle each cookie with a bit of crushed candies and let cool and dry completely (say, overnight, but you will have to hide them from marauders) before storing in an airtight container. Me, I’m a heavy dipper, so I had no chocolate left over.
