Melon and Cheese Sticks


So quick, so tasty, and no oven required!

Ingredients:

10 one-half cubes of cantaloupe (a little over one cup of cubes)
10 one-half inch chunks of cheese (your choice-I used Muenster because it’s creamy and neutral)
3 slices cooked bacon, cut into 10 one-half inch pieces (optional).*
10 one-half inch cubes watermelon (also a little over one cup of cubes)
10 mint leaves
10 small skewers
Drizzle of Cherry Syrup (recipe below)
Sea salt and/or fresh cracked black pepper, to taste (optional)


Directions: Thread one mint leaf, one cube of watermelon, a piece of bacon, cheese and then cantaloupe onto skewers. Place on plate and drizzle with Cherry Syrup. Sprinkle with a little finishing salt like grey sea salt or even a sprinkle of fresh ground black pepper.

Cherry Syrup: Pour ½ cup black cherry juice concentrate into a microwaveable bowl, along with 1 Tablespoon agave syrup or honey. Microwave on medium for about 1 minute, until syrupy. Let cool.

Get creative on me: Leave out the bacon entirely or substitute prosciutto or other ham. Use a different cheese, like manchego or even blue. Use different fruits—grapes or pieces or fresh peaches would be awesome! The world is your kebab, my friends.

*Note on the bacon—I’m not proud and my stove and oven are broken. I used the microwave kind!
