Veggie Stromboli


Ok, my niece told me she had made a Stromboli, so I just had to make one, too! I’ve never made one before and I wanted a recipe I could serve to company other than the traditional pizza. 
  
Ingredients:
Pizza dough for 2 medium or 1 large pizza(s) (home made, fresh from the pizzeria/store, from a box or from the refrigerated section--whatever you want)
2 teaspoons cornmeal
2 teaspoons olive oil
½ cup chopped onion
½ cup chopped green pepper
1 ½ cups chopped mushrooms
1 cup chopped fresh spinach leaves
4 roasted red pepper strips, from a jar or homemade
½ cup marinara sauce
1 1/2 cups shredded mozzarella
1 cup provel ropes (or shredded provolone)
3 teaspoons pizza seasoning
1 egg, lightly beaten
¼ cup grated parmesan cheese
  
Directions:
Prepare pizza dough and set aside. In a large non stick pan, heat oil and sauté onion, green pepper, mushrooms and spinach together until soft (about 10 minutes on medium low). Add 2 teaspoons pizza seasoning and turn off heat. Prepare a baking sheet by lining it with foil, spraying with vegetable spray and sprinkling cornmeal down the center of the pan, about 4 inches wide.

Preheat oven to 375 degrees F. Roll out dough into a large rectangle on a floured surface and place on the baking sheet. Spread the marinara in the middle of the dough, leaving 1 inch bare at the short ends of the dough, and 2 inches bare on each side. Top the sauce with half the mozzarella and half the provel. Spread the sautéed veggies on top of that and lay the red pepper strips right down the center. Add the rest of the cheese and sprinkle with the remaining pizza seasoning. Brush your bare edges with the beaten egg and fold the long edges of the dough up and over the filling and pinch edges together. Pinch the short ends together and tuck under the loaf. Brush  beaten egg over the top and sprinkle with parmesan. Cut several slits in the top to let the steam escape.  Bake for 25-30 minutes or until the top is golden brown. Some cheesy oozing may occur but, to me, that just makes it more enticing. Let cool for about 5 minutes before slicing.
