Mashed Potato Puff


Ok, all together now: Mmmmm, comfort food!
  
Ingredients:
2 Tablespoons dry seasoned bread crumbs
3 cups leftover mashed potatoes, brought to room temperature
1/3 cup milk
2 eggs, separated
2 teaspoons  grated onion
2 Tablespoons imitation bacon bits (or crumbled real bacon)
1 cup shredded cheddar cheese
½ cup plus 2 Tablespoons grated parmesan
  
Directions:
Taste your mashed potatoes to see if they are salted enough for your taste. If not, add a little salt. Preheat oven to 350 degrees F. Grease a 1.5 ounce casserole (I liked to use a saved butter wrapper for this). Coat all sides with dry breadcrumbs, shaking out excess. Meanwhile, add milk, egg yolks, onion, bacon bits, cheddar and ½ c parmesan to mashed potatoes. Stir well with a wooden spoon. Beat egg whites until stiff and gently fold into the potato mixture one spoonful at a time. Spoon the mix into casserole dish and sprinkle the 2 TB parmesan over the top. Bake for 60 minutes or until lightly golden brown on top.
  
Get creative on me: Don’t be snobby about instant mashed potatoes-I made this with instant mashed potatoes and it worked great! Finely diced ham and some very finely chopped green onion sound nice. So does changing out to peper jack cheese and putting in a little tabasco.
