Flourless Peanut Butter Cookies


  
Ingredients:
1 cup peanut butter
3/4 cup artificial sweetener for baking or sugar
1 large egg
1 teaspoon vanilla extract
½ teaspoon salt

Directions
Preheat oven to 350 degrees F. In a medium bowl, mix the peanut butter, sweetener or sugar, egg, vanilla and salt until well combined. Spoon 1 tablespoon of mixture about 1 inch apart onto baking sheets that have been lined with parchment paper. Fill a clean coffee cup with hot tap water and place a metal fork in it. With the fork (which you want to dip in the hot water every so often), flatten the cookies with a crosshatch pattern (first horizontally, then vertically). Bake 10-12 minutes or until golden around the edges, turning the pans halfway thorough baking. Transfer to racks to cool.

Note: I usually do some with sweetener and some with sugar, topping the cookies that have sugar with a sprinkle of raw, washed sugar before baking to give them a nice crunch and to identify those on a cookie plate.
