Simple Frittata


It’s easy, it’s quick and it’s inexpensive. Added bonus: it’s one of the greatest meals ever. Pair with some cole slaw or a nice green salad with vinaigrette. Ok, maybe some crusty bread, too!


Ingredients:
1 Tb olive oil
1 Tb butter
¼ c chopped onion
10 eggs
1/3 cup cream or half and half (hey, use milk if you want)
1 tsp salt
½ teaspoon fresh cracked pepper
5 slices cooked bacon, crumbled (I used the kind you can just microwave)
½ c cheese, cut into a small dice (any kind will do, a mix is even better—great way to use up those ends of cheese pieces)
¼ c shredded parmesan

Directions:
Preheat oven to 400 degrees F. In a 10 or 12 inch oven safe skillet, melt the oil and butter together. Add chopped onion and cook for 5 minutes on medium until translucent (slightly brown at the edges is fine). In a separate mixing bowl, whisk the eggs, cream, salt and pepper. Add in the bacon and cheeses and then pour into the hot skillet. Continue to cook on medium for 8 minutes or until the edges start to set. Sprinkle the top with parmesan and pop the whole shebang into the oven for 20-25 minutes or until the top is starting to get golden and the center doesn’t jiggle. Remove from the oven, let cool for a few minutes and slice like a pizza.

Get creative on me: Substitute ham, pancetta or salami for the bacon. Heck, leave the meat out entirely if you want. Use half egg substitute and half eggs. Use all one type of a cheese you prefer. Add extra veggies like spinach or bell peppers. Maybe even some sliced tomatoes on top before the parmesan goes on. Change up the seasonings, whatever. Just have fun with it and enjoy it for it’s comforting goodness.
